Whole hog vs. shoulder Β· Vinegar vs. dip Β· Wood, not gas
NC Barbecue
North Carolina has two native barbecues and has argued about them for generations. Down east, the whole hog goes over the coals and gets chopped with vinegar and pepper. In Lexington and the Piedmont it's the shoulder, a thin red dip and red slaw on the bun. The legislature once tried to name an official festival and settled for a regional one. These eight games cover both sides, the joints people drive across the state for, the hushpuppies and the Historic Barbecue Trail.
